What is Cabernet?
Cabernet Sauvignon (Cab-burr-NAY So-veen-YOHN) is the grape that put California wines on the international map as one of the world’s top wine regions. It is arguably the state’s most compelling variety, capable of becoming wines of enormous structure and concentration. Since the late 1980’s the best California Cabernets have gotten lusher, richer, softer, and more complex by the year as winemakers and viticulturalists have continued to refine their methods for growing and wine making.
Cabernet Sauvignon is the world’s most famous red wine grape. It is the most planted, top quality wine
variety in the world. Cabernet Sauvignon ages extremely well in the bottle, developing subtle flavor
compounds and nuances over time. Cabernet Sauvignons’ great distinction of the wine it produces, no matter where the grape is grown but especially in California , is a very powerful and recognizable aroma of black currant. Other common Cabernet Sauvignon aromas are black cherry, red currant, cedar, tobacco, coffee, and chocolate. In general, Cabernet Sauvignon is high in tannins, has high acid, and is dense in color.

California Climate- perfect for grape growing
California ’s climate is very conducive to the growing of grapes for the following reasons:
1. Ample sunshine - needed for sugar production in the grape
2. Lack of severe winter freezes - avoiding killing frosts/freezes that can kill the vines
3. Low humidity - inhospitable for mold and other diseases
4. Relatively little rainfall during the summer and harvest season - allowing the grower to control vine
growth through irrigation
