Slow Saturdays!
Slow Food was founded in Italy in 1989 as a counter movement to what Fast Food was doing to our diets and society. Slow Food promotes the use of seasonal ingredients and locally-sourced foods because they are simply better and fresher. The Mediterranean cuisine is founded on simple recipes, but the ingredients must be top quality and ultra fresh. Our Mediterranean-inspired menu combines the tenants of Slow Food and the cuisines of the Mediterranean, resulting in a harmonious blend of flavor, freshness and taste.
To celebrate seasonal ingredients and our fantastic local artisans, this Saturday, we’ll initiate what we’re calling “Slow Saturdays”. Each Saturday, we’ll feature specials that highlight seasonal produce and ingredients from right here in Central Florida and we’ll pair these dishes with amazing wines. It’s truly a culinary event – and affordable, too! Keep an eye out for more Slow Food events this fall!

Sausage and Peppers Flatbread
An authentic Italian favorite prepared with homemade Barri Foods sausage, fresh colorful bell peppers, and onions slow sautéed in Harmoni’s homemade Marinara sauce, smothered with velvety mozzarella on Olde Hearth Flatbreads.

Puttanesca is an urban and modern sauce named for its spiciness and pungent flavor. Tender Gulf Shrimp in a tomato, olive and caper sauce tossed over linguini, finished with homegrown basil.

A timeless dish prepared at the peek of Eggplant season! Thin sliced breaded eggplant, piled high with layers of Harmoni homemade Marinara, homemade mozzarella, and ricotta cheese.

Parmesan Crusted Scallops with a Pineapple Salsa
George’s Bank Scallops with a sharp Parmesan golden crust topped with a fresh Cilantro Pesto Sauce. Accompanied by a summer Pineapple Salsa.

Flat Iron Steak Chimichurri with Zellwood Grown Corn
Tender cut steak over an open grill, topped with a Chimichurri sauce. Served with roasted garlic mash potatoes and sweet Zellwood Corn.

California Dreamin’!
Clayhouse Cabernet and Bordeaux Blends – Paso Robles, California
The Vineyard Cabernet Sauvignon is driven by red fruit flavors (cherry and plum), complemented with dusty oak, coffee, and slight green olive nuances. It’s rich and soft in the mouth, with a toasty, dry finish of fine, dusty tannins.
Long Meadow Ranch Sauvignon Blanc - Napa Valley, California
This wine has classic Sauvignon blanc fruit notes, of kiwi, pineapple and meyer lemon peel, floral notes of citrus blossom and jasmine are revealed as it breathes. It has a balanced acidity with a round mouth feel, and a smooth finish.
MacRostie Keltiebrook Merlot - North Coast, California
Dark blackish-purple, garnet edge. Plums and cherries, pleasant fresh fruit on the nose and palate, nicely balanced by snappy acidity. A well made, and balanced Merlot.
Cinnbar Mercury Rising Interesting Whites - Monterey and Sonoma County, California
This wine is made up of sauvignon blanc, Viognier & Semillon. It has aromas of Meyer lemon peel, white peach, honeysuckle, wet stones and grass. The palate shows the same flavors with some honeydew melon and citrus. It has a crisp acidity and finishes long and clean.
Artezin Zinfandel - Napa Valley, Amador County, Sonoma County and Mendocino County, California
Rich and plush with fresh raspberry and blackberry aromas melding with black pepper and licorice. Black cherry flavors with nutmeg and white pepper lead to dark chocolate undertones in the finish.
Annabelle Chardonnay - Napa Valley, California
This wine has a beautiful straw color with subtle golden hues. This medium bodied fruit forward Chardonnay has bright flavors of lemon, apricot and fig. There are delicate pineapple and vanilla overtones that develop as the wine opens up. It has a soft mouth feel and a silky finish. This wine is very well balanced and can compliment a wide variety of foods. It would pair equally well with an herb roasted chicken, or lobster with lemon wedges and drawn butter.

She requested that we let her tell their personal stories. Over the coming months, Patty will be describing the stories of artisans like Shannon Talty and Janice Brahm at Olde Hearth Bakery, David Kahan at Z Coffee and Melanie, Tess and Melinda at Trio Gelato. Patty’s Story!
My passion for food was ignited as I traveled through the Mediterranean. I can recall my shopping adventure in Las Ramblas (Barcelona’s bustling promenade), my drive on the Amalfi coast, and an afternoon picnic in Villefranche by the simple crisp sound of zesting a fresh lemon. I strive to recapture those experiences in every dish I execute and recipe I imagine.
When I first began to cook, I was intimidated by sharp knives and complicated techniques. I would look for inspiration in early morning strolls through a local farmers’ market. An array of sun warmed vegetables and aromas tantalizing memories of my mami’s kitchen, sparked my creativity.
Now I have the privilege of working as a sauté chef at Harmoni Market. I have developed an appreciation for food; preparing, savoring, and sharing it. I reflect on the words Jefe (Chef David Nuss) uttered to me in passing, “This is your peace. Your space from the world,” referring to our six burner gas stove top and double lined open kitchen.
From that I took, find sinful pleasure in the first bite of a summer strawberry, enjoy the sweet juices from a ripe tomato running down your chin, and savor the perfect combination of a simple meal and the ones you want to share it with.
Perhaps at any given moment you might not find this passion or appreciation for food so poetically executed in our open forum. Often it’s chaotic food flipping and plate juggling. However, at a closer glance you’ll witness a carefully choreographed balance of skill, timing, and camaraderie.
I’m continuously grateful for the opportunity I take part in everyday. I am challenged, constantly learning practical and creative skills, and surrounded by people who share my desire. I’m very fortunate to have found a place that holds my perspective on food, and life for that matter, as the foundation for its success. Take the time to enjoy delicious, fresh food with friends and family. In other words “Viva Bene!”
These articles you’ll begin to receive are a reflection and celebration of the artistry and dedication involved in the Harmoni Market concept. Perhaps it’s not so much a concept as it is an ideal? My hope is that as you follow my curiosity as I explore my “space from the world” and develop an understanding and passion as well.
It would be cliché for me to say “If I can do this, anyone can”, because that’s just not the case. Not many people can find a sudden burst of adrenaline entering their eleventh hour on a shift when 20 tickets come flying in at once, let alone joke, sing and (as Peffers has been known to do) dance. I will simply say that I love what I do and look forward to showing you why.
